Classes

Thanks to all the support from my family, friends, and fans I’ve decided to start teaching classes!  I’ll be hosting my classes at the state-of-the-art commercial kitchen in the Manassas Park Community Center.

Focus on Cakes
Class Dates: 5/15, 5/22, 5/29, 6/5, 6/12  (Tuesdays)
Cost: $200
Price is for all five sessions
Time: 7:00 pm – 9:00 pm
(Students may arrive 1 hour early)
**Students must bring their own electric mixer**

Focus on cakes is for people who would like to practice and refine their cake making and decorating skills. Students should have taken the Fundamentals course prior to taking Focus on Cakes or should have some cake making experience.

The first and second sessions we’ll hit the ground running and bake all of the cakes we’ll need for the remainder of the course. Bring your A game because the more we get done during this session the more time we’ll have for decorating for the other sessions. If we get far enough ahead we’ll also made and freeze Swiss buttercream to use for later sessions.
The third session we’ll ice the devil’s food chocolate cake using basic decorating skills such as trimming cake layers, icing sides of the cake, piping shell borders, and if time allows, make buttercream roses.
The fourth session we’ll decorate a yellow cake and ice it the same way as session two. We’ll cover decorating skills not covered in session two including piping a basketweave on the sides of your cake. Students should take the time to refine and practice their weaker areas from session three.
The fifth session we’ll ice two cakes – an 8″ vanilla chiffon genoise and a 10″ vanilla chiffon genoise – and then tier them. We will then decorate them basic wedding cake style with buttercream roses and scroll work with writing tips.

Focus on Doughs
Class Dates: 5/17, 5/24, 5/31, 6/7  (Thursdays)
Cost: $155
Price is for all four sessions
Time: 7:00 pm – 9:00 pm

There is so much more to baking than cakes!  In the Focus on Doughs class you’ll get a taste of all kinds of doughs that are used to make a variety of baked goods.
In the first session we’ll make a lemon meringue pie from scratch.  You’ll learn how to make pie dough from scratch, how to roll out a pie shell, how to par-bake or blind bake a pie shell, how to make lemon meringue pie filling, and how to make an egg white meringue.
In session 2 we’ll make ganache filled beignets and introduce you to yeasted doughs and fried dough.  We’ll also make and freeze puff pastry dough for session 3.
In session 3 we’ll finish off our puff pastry dough and make apple turnovers and we’ll also make crackers from scratch, a great savory dough for all occasions.
In our final session, we’ll make pate a choux from scratch.  Pate a choux is the dough that is used to make cream puffs and eclairs.  You’ll learn how to properly make this pastries and how to check from doneness.
