Gum Paste Recipes

Sorry it took so long to get these gum paste recipes to you.  As I said in the gum paste video, I stick with the Satin Ice brand just because it’s consistent and I don’t really make gum paste flowers in such excess that I would really get any benefit from making my own gum paste.  The chefs who taught me their recipes do like the level of customization you have over their recipes – you can control how pliable, how moist, and how dry your gum paste is.  However, if you’re like me and you prefer sticking to the basic flowers or just learning the basics try using Satin Ice before trying to make your own.  That way you’ll know how to customize the recipe if you eventually do make it yourself.

Right now I have two recipes from Keith Ryder, a prominent cake decorator and pastry chef in the Northern Virginia area (http://www.bcakes.com/).  He teaches classes on gum paste flowers and cake decorating as well.  Here are Keith Ryder’s Gum paste recipes.
